Before lemon juice, there was aamchur. Dry mango powder, amchoor, is one of India's oldest souring agents, made by drying raw unripe mangoes at peak tartness and grinding them into a fine, cream-coloured powder that carries a distinctly fruity, tangy acidity unlike any other spice.
Hariom Aamchur Powder is made from carefully selected raw green mangoes, sun-dried to concentrate their natural tartness and then finely ground for smooth, even blending.
What makes aamchur irreplaceable in Indian cooking is that it provides tartness without adding moisture which matters enormously in dry dishes like aloo tikki, samosa filling, and chaat, where a squeeze of lemon would make the preparation soggy. Its fruity, sun-dried flavour is also more complex than raw lemon juice: slightly sweet, slightly fermented, distinctly mango-like; which is why spice blends from chaat masala to chole masala use it as a foundational ingredient. Rich in Vitamin C from the raw mango base, aamchur is also a traditional digestive and immunity-supporting spice.
