Description
Sambar is one of the most complex spiced dishes in the Indian culinary canon, a tamarind-based lentil soup elevated by a spice powder that can contain anywhere from twelve to twenty different ingredients depending on the regional tradition. Getting it right without a grandmother in the kitchen takes a genuinely well-crafted masala. Hariom Sambhar Masala is blended with a recipe that honours the South Indian tradition, built around the classic trio of whole coriander, cumin, and dried red chilli, rounded with curry leaf, black pepper, fenugreek, and chana dal, toasted and ground together to produce the characteristic fragrance that wafts through South Indian homes at breakfast time.
This is not a "North Indian sambar" masala, a common failing of nationally distributed blends that strip out the characteristic fenugreek bitterness and curry leaf depth that define the real thing.
Hariom's blend is calibrated specifically for authenticity, producing a sambar with the proper sour-spicy-earthy balance that makes idli and dosa genuinely incomplete without it.
