The kacchi ghani process is what makes the real difference here.
Rather than using heat or chemical solvents to extract oil, the method used by most refined, mass-market oils, kacchi ghani presses the seeds slowly at low temperature. This preserves the oil's natural antioxidants, its essential fatty acid profile, and its authentic aroma, none of which survive industrial refining intact.
